More and more Americans, especially those with serious illnesses such as breast cancer, are turning to complementary and alternative medicine to supplement their Western treatments. This collection of essays edited by oncologist Tripathy and acupuncturist/herbalists Cohen and Tagliaferri (who herself is a breast cancer survivor) is intended to serve as a guide to the alternative therapies most often used by women with breast cancer. The book includes dense and sometimes meandering chapters on approaches such as Chinese Medicine, vitamin and mineral supplementation, meditation and prayer. The authors maintain that little research has been conducted on these therapies because of lack of funding and the difficulty in evaluating alternative medicine separately from conventional, but that data has become increasingly available. Although most of the chapters are largely based on research, others rely simply on seemingly improbable anecdotes (for example, one chapter describes a patient who recovered from inflammatory breast cancer after she began following a macrobiotic diet). Despite its inconsistencies, women with breast cancer looking for alternative therapies might find this book to be a good start in their own research. In the preface, Tagliaferri writes that this is the book she wished existed in 1996 when she was diagnosed with breast cancer. A licensed acupuncturist, certified herbalist, and director of the Traditional Chinese Medicine Clinic (Univ. of California, San Francisco), Tagliaferri joins forces with Debu Tripathy (Mt. Zion Breast Care Ctr.) and Isaac Cohen (American Acupuncture Ctr.) to create this empowering guide for breast cancer patients. In addition to the editors, who each authored a chapter, contributors to the book include such notables as health guru Dean Ornish and breast surgeon Susan Love. Of the book's 15 chapters, 13 cover the physiological, psychological, emotional, and spiritual aspects of dealing with breast cancer and speak directly to the cancer patient about integrating conventional medicine and complementary therapies. One chapter focuses specifically on a clinic in San Francisco for low-income women and would have been more appropriate for the resources section. A chapter on evaluating health information, on the other hand, is quite helpful. The book concludes with an extensive resources and notes section. Though women will find useful information here, men seem to be the main audience for this book, that is men serious enough about their hard body to endure a regimen of supplements, a strict meal plan and several weeks of high-intensity workouts. Students of fitness science will have the chance to learn all about things like "Positive Nitrogen Balance," "The Anabolic State" and the "Lactic Acid System." Formulas are provided to calculate recommended daily calories, target heart rate during workouts and current muscle-to-fat percentage. Exercises and stretches come with pictures and drawings to demonstrate, and a daily exercise checklist and food journal demand accountability. The fact that Shilstone can take credit for the athletic bods of heavyweight champion Michael Spinks, NBA star Manute Bol and baseball legend Brett Butler proves his techniques are sound. But his writing doesn't serve to entertain, and his textbooklike tone makes reading a chore. (Mar.)

Perhaps the approach of Father's Day explains the simultaneous appearance of three "men's" cookbooks. Its catchy title notwithstanding, Boswell's A Man and His Pan is essentially an eclectic collection of favorite recipes from a man who likes to cook, whether for his family (there's a separate chapter on cooking for kids) or for guests. Boswell is coauthor of The Best Fryer Cookbook Ever (HarperCollins, 1998) and the packager of the "365 Ways To Cook" series. Here the gimmick, such as it is, is that all the recipes, from Pepper-Crusted Steak Flamb ed in Whisky to Asian-Flavored Arctic Char, are made in a large nonstick frying pan. Many are quite easy, although they do assume some experience in the kitchen. For larger collections. With his wife, a food writer and editor, Bowers, who has a restaurant background, has written an entertaining but at heart serious cookbook. Despite his tongue-in-cheek macho tone, he conveys a lot of useful information on food and cooking, starting with "Men and Hardware" (kitchen equipment) and moving on to "Men and Flame" (grilling, flamb eing, and "blowtorch cooking"), "Men and Fat" ("They Don't Call It a Fry-Mama"), and "Pommes des Hommes" (vegetables), among other topics. The recipes are tasty and wide-ranging, not confined to hearty "guy food" by any means. Recommended for most collections. Mauer, author of the best-selling Lean and Lovin' It (Chapters, 1996), has always been the family cook, but about ten years ago, he changed his habits, scaled back on fat, and lost 100 pounds. Disdaining diet books that consider half a cup of macaroni and cheese enough for a serving, he's come up with 175 recipes that are relatively low in fat but designed to satisfy hearty appetites. Mauer has a more "down-home" approach than Bowers and a less sophisticated style, but many family cooks, male or female, will find lots of recipes to try here. For most collections.
